Green Tea

Green Tea (绿茶) is produced by purposely dehydrating (or withering) freshly plucked leaves to stop the oxidisation process all together. This results in an increase in the polyphenol content and locks in the plant characteristics and nutrients. Mainly produced in China and Japan, Green Tea is said to have numerous health benefits and a relatively low caffeine content compared to black tea.
